Theoretically you can last for quite a while as your pancreas doesnt stop developing insulin immediately, it just slows down until it may stop entirely. But in this day, it would be absolutely ridiculous not to see a doctor immediately as there are certain steps that can be taken for early onset type one that can slow down or in some cases reverse the demise of the insulin developing cells.
However, usually it takes longer than a week for symptoms to be evident, so, it could very well be something else. Depending where you are and how easy it is to do so, you could just see a doctor without telling your mother if you are that afraid of telling her. Don't let it sit.

Type 2 can go unnoticed for quite some time. Type 2 makes insulin. Type 1 will kill you if it goes ignored too long. you can't process anything you ate without insulin. Since a type 1 doesn't make insulin, the person actually starves to death despite the fact that they're eating.
Feeling fine? Well, you wont really. You'll start with the thirst and urination, then it gets so frequent you'll think you're losing your mind. This is coupled by irritability. This crabbiness is from the get-go, so you never really feel fine. If/when it evolves into Ketoacidosis (this is where it gets really dangerous), symptoms to expand to include funky smelling breath and pores, unexplainable sleepiness, labored breathing and ultimately projectile vomiting.
Talk to your parents right away. Dont wait.

I think if you told your parents that you feel sick, they are going to ask what your sick with. Tell them your symptoms and when you get to the Dr. tell them you are scared it could be diabetes. Get tested.
If you have new onset type 1 diabetes, you will continue to get sicker till you go into a coma without treatment. How long it takes for that to happen varies a little with different people. It depends on how much your body is still hanging on the those last insulin producing cells before the last die off and you need injections for the rest of your life. Just talk to your parents about not feeling well and go for a check up.

Well, If your having the symptoms already, then your not "perfectly fine"
And if you really do have it, chances are it is just going to get worse.
If you don't wanna suggest it, then just say you feel sick, and ask her to schedule a doters appt, blood sugar testing should be a routine there, and if its not, then ask just in case.
good luck (:

If they're bad symptoms, I don't think there's any guaranteed safe time. But your school nurse may be able to do a blood sugar test and see what your sugar levels are . . . .
